What ingredients do I need for Glowing Skin Soup?

olive oil: A healthy oil to help coat the pan and adds a nice flavor.

yellow onion: Sauteed to bring flavor to the soup

red bell peppers: Has vitamin C and collagen which is great for skin

Seasoning: dried basil, thyme, oregano, garlic powder, salt, pepper

sweet potato: Has Vitamins A & C, as well as beta carotene which protects your skin from sun damage.

cherry tomatoes: Keep your skin glowy and moisturized

veggie broth: Base of the soup

coconut cream: Gives a creamy texture

bread: Good for the soul! (and dipping!)

How do you make Glowing Skin Soup?

1. Saute the onions and bell peppers.

2. Add the tomato and spices.

3. Add in sweet potato and vegetable broth. Bring to boil then cook on medium high for 10 min until the sweet potato is tender.

4. Add coconut cream then turn heat off. Time to blend!

5. Garnish with pepper, parsley and more coconut cream.

6. Pair with crusty bread!!! Yum.

You can use any type you like! I prefer sourdough bread from a local bakery.

  • What could I use instead of coconut cream?

You could use coconut milk or any nut based or dairy free milk.

Extra Helpful Tips

  • Don’t worry about having perfectly cut veggies. They will all get blended together!
  • Save some of your coconut milk and herbs to sprinkle on top when serving.
  • Have some 3 day old bread on the counter that you need to “bring back to life”? Run it swiftly through some light water and toast in the oven for a few minutes. It will no longer be stale!

  • 2 tbsp olive oil
  • 1 small yellow onion
  • 2 red bell peppers chopped
  • 1 pint cherry tomatoes
  • 1 tsp dried basil
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 2 tsp salt
  • 1/4 tsp pepper
  • 1 sweet potato cubed
  • 32 oz veggie broth
  • 1/2 cup coconut cream
  • Good crusty bread

instructions

  • In a soup pot, saute onion and bell peppers in olive oil until tender. (5-9 minutes)
  • Add the tomato and spices (dried basil, thyme, oregano, garlic powder, salt and pepper) and saute another few minutes.
  • Add in sweet potato and then pour in vegetable broth. Bring to boil then cook on medium high for 10 min until the sweet potato is tender.
  • Add coconut cream then turn heat off. Use an immersion blender to blend the soup or spoon into a standing blender. Blend! I like to leave some texture.
  • Garnish with pepper, parsley and more coconut cream.
  • Pair with crusty bread!! Yum!
