What ingredients do I need for Mediterranean Gnocchi?

gnocchi: any type that you prefer

olive oil: to saute the veggies

cherry tomatoes: boosts immunity and has antioxidants

minced garlic: adds flavor

zucchini: improves digestion and lowers the risk of heart disease

red onion: helps to manage cholesterol levels

red bell pepper: high in vitamin C

brown lentils: rich in iron and folate

vegan feta: adds to the delicious flavor

kalamata olives: contains essential minerals

sun-dried tomatoes: has antioxidants and the ability to decrease the risk of chronic diseases


Dressing:
olive oil
red wine vinegar
fresh parsley
garlic powder or fresh
hummus
dried oregano
salt + pepper

How do you make Mediterranean Gnocchi?

Saute zucchini, red onion, garlic, and red bell pepper.

Pan fry gnocchi until golden brown and whisk dressing ingredients in a bowl.

Assemble all ingredients in a bowl then gently toss and combine.

What if I do not have vegan feta?

the ingredients

  • 16 oz gnocchi
  • 1 tbsp olive oil
  • 1 cup halved cherry tomatoes
  • 3 cloves minced garlic
  • 1 diced zucchini
  • 1 diced red onion
  • 1 diced red bell pepper
  • 1 14 oz can brown lentils rinsed and drained
  • 1/2 cup vegan feta
  • 1/4 cup sliced kalamata olives
  • 1/4 cup sliced sun-dried tomatoes

Dressing

  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 2 tbsp chopped fresh parsley
  • 1/4 tsp garlic powder or 1 tsp fresh
  • 2 tbsp hummus
  • 1 tsp dried oregano
  • Salt + pepper to taste

instructions

  • In a pan, saute minced garlic, zucchini, red onion, garlic, red bell pepper in olive oil until tender.
  • While veggies cook, pan fry gnocchi in a pan until golden brown (I use Trader Joe’s cauliflower gnocchi).
  • Whisk dressing ingredients in a bowl.
  • Assemble everything in a bowl including cooked gnocchi, lentils, sautéed veggies, feta, olives, sun dried tomatoes, and the dressing.
  • Gently toss and combine. Enjoy!
  • Store in the fridge for 2-3 days.
