This Glowing Skin Soup has super simple ingredients with a ton of flavor! It is easy to make, and has ingredients like sweet potato, tomato, and bell pepper to help keep your skin looking glowy and fresh!
In a soup pot, saute onion and bell peppers in olive oil until tender. (5-9 minutes)
Add the tomato and spices (dried basil, thyme, oregano, garlic powder, salt and pepper) and saute another few minutes.
Add in sweet potato and then pour in vegetable broth. Bring to boil then cook on medium high for 10 min until the sweet potato is tender.
Add coconut cream then turn heat off. Use an immersion blender to blend the soup or spoon into a standing blender. Blend! I like to leave some texture.
Garnish with pepper, parsley and more coconut cream.
Pair with crusty bread!! Yum!

Don’t worry about having perfectly cut veggies. They will all get blended together!
Save some of your coconut milk and herbs to sprinkle on top when serving.
