I got an air-fryer a few months ago and I have been slowly finding recipes that I absolutely LOVE to make in it. I decided to make vegan air-fried pickles and WOW, I am blown away by how delicious they turned out.
These vegan air-fried pickles are crunchy, crispy, perfectly salty, delicious and 100% plant-based! They are also gluten-free optional if you use gluten-free breadcrumbs and are oil-free. Feel free to spray a little oil if you want them extra crispy but you can totally do these without ANY oil! Yum!
What is the best kind of pickle to use in this recipe?
I used Manhattan style, whole kosher dill pickles for this recipe, I think they’re the best! They have the perfect flavor and texture. Simply slice them 1/2 inch thick and they’re ready for the dipping station. Let’s go!
How do you make vegan air-fried pickles?
Dip each piece in aquafaba (chickpea liquid), then into breadcrumbs. Make sure to coat them evenly! Use any kind of breadcrumbs you like. Place them on a plate or baking sheet as you assemble.
How long do these take to cook?
This recipe only takes no more than 20 minutes total. It takes about 10-minutes to prep then about 6-8 minutes in the air-fryer – talk about easy! We love an easy VEGAN recipe here at HealthyGirl Kitchen.
Important tip:
After they are done in the air-fryer, carefully and gently pick them up and add them to a plate and serve! Handle them gently otherwise the breading will fall off!

It’s creamy, delicious and way healthier than traditional ranch. Hemp seeds are filled with healthy fats and protein which make this ranch so nutritious.
Fun fact: I came to realize that after making these, my whole kitchen smelled like a fast food restaurant – and I’m not talking about in a gross way but the best kind of way. It smelled like HEAVEN. I think the combination of the smell of the pickles with the fried breadcrumbs somehow made the kitchen smell like McDonald’s at home.

Vegan Air-Fried Pickles (oil-free)
the ingredients
- 6 pickles sliced I use Manhattan style whole kosher dill pickles
- 1 cup aquafaba chickpea liquid (put chickpeas away for later and save the liquid when straining)
- 1 cup breadcrumbs of choice
Hemp Seed Ranch
- 1/2 cup hemp seeds
- 3/4 cup water
- 1 lemon juiced
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 2 tsp dried dill
instructions
- Prepare two bowls. Add aquafaba to one bowl and breadcrumbs to another. This will be your assembly station.
- Preheat air-fryer to 400 degrees F. Slice pickles about 1/2 inch thick. Dip each pickle slice in aquafaba first then in the breadcrumbs. Coat evenly. Place pickles on a plate or on parchment.
- Add the pickles into the air-fryer and cook for 6-8 minutes or until golden brown.
- Enjoy!

- Blend all hemp seed ranch ingredient in a high speed blender until smooth.
