Sweet Potato Avocado Toast

Avocado toast is a classic healthy breakfast but if you want to try something new you have to try making sweet potato avocado toast. The key is to use baked sweet potato slices instead of bread. This is a delicious gluten-free alternative to bread and packs in a ton of vitamin A. I collaborated with Poosh on this recipe, which means Kourtney Kardashian would definitely approve of this breakfast!

What ingredients do I need?

Avocado: make sure it’s ripe!

Sweet potato: cut into slices and baked for 20 minutes or until golden brown and fork tender.

Cucumber: make slices of cucumber to top your toast.

Sesame seeds: this makes a great topping and is filled with healthy omega 3 fats.

Salt + pepper for garnish! That’s it!

What is the best way to make the sweet potato?

First, peel the sweet potato, unless you want to keep the skin on, that’s up to you. Cut into slices about 1/2 inch thick. Prep a baking sheet with parchment paper lay the sweet potato on the parchment. Spray with olive oil spray and season with salt and pepper.

Because the sweet potato is pretty thin, it should only take 20 minutes to bake. You can also air-fry them for 10 minutes or bake them in the toaster oven if you want it to be faster.

Bake until desired crispiness is achieved.

Pro tip: Prep and roast a bunch of sweet potato slices for the week so they are ready to go. In the morning, just pop in the toaster to warm.

The toppings:

Once the sweet potato is cooked, top with mashed avocado, cucumber slices, sesame seeds, salt and pepper.

Alternative toppings: hummus, tomato slices, vegan cream cheese, almond butter and banana if you want a sweet version of this toast, hemp seeds instead of sesame seeds, the combinations are endless.

Sweet potato avocado toast is the perfect way to get in some incredible nutrients. Sweet potatoes are a nutrient powerhouse filled with vitamin A, vitamin C, B vitamins and potassium.

They are one of those gut-healing foods that has fiber yet is gentle on digestion. The antioxidants in sweet potatoes help to prevent diseases as well. Moral of the story: eat more sweet potato avocado toast! The healthy fats from the avocado are also great for eye health, brain health, hormone function, and luminous skin.

the ingredients

  • 2 slices of sweet potato
  • 1 mashed avocado
  • 1/4 cup cucumber slices
  • 1 tbsp sesame seeds
  • salt and pepper to taste
  • 1 tsp olive oil

instructions

  • Preheat oven to 400° F. Peel and slice sweet potato into long pieces about ½ inch thick to make your “toast.” 
  • Roast sweet potato slices for 20 minutes
  • Top with mashed avocado, cucumber slices, and sesame seeds for extra healthy fats. Season to taste with salt and pepper. Drizzle olive oil on top. 
  • Enjoy!

      It is best to eat them fresh, but if you need to store them, use an air-tight container and add a little lemon juice to the avocado to keep it from browning.
