Preheat oven to 400° F. Peel and slice sweet potato into long pieces about ½ inch thick to make your “toast.”
Roast sweet potato slices for 20 minutes
Top with mashed avocado, cucumber slices, and sesame seeds for extra healthy fats. Season to taste with salt and pepper. Drizzle olive oil on top.

Notes
Don’t cut the sweet potato slices too thin, otherwise they won’t hold up well. Cut them at least ½ of an inch thick.
Love to meal prep? Roast a bunch of slices of sweet potato for the week and keep in a container in the fridge. Pop in the toaster when you’re ready to eat breakfast.
