This vegan Nourish Pot will warm you up and nourish you from the inside out with all of the delicious and hearty ingredients. It is perfect for a cozy night in or a potluck with friends. Not only is this dish delicious, but it is also dairy free, gluten free, and super easy to make. You can throw in any veggies you have on hand in the fridge! Notes on Ingredients
- Kale: You can use any green including spinach or swiss chard.
- Lentils: Be sure to rinse your dry lentils before cooking them to remove excess starch. I used red lentils but any kind works.
- Sweet Potato: Butternut squash or carrot would work great in place of sweet potato.

How do you make Nourish Pot?
- Chop all veggies (onion, mushrooms, kale, sweet potato, bell pepper).
- In a large soup pot, add olive oil, onion and mushrooms and sauté for 5 minutes.
- Add the remaining ingredients to the pot and bring to a boil.
- Cover and reduce the heat to low. Stir every 5 minutes for 30-40 min until lentils are tender and sweet potato is cooked!
- Serve over rice. Cozy up and enjoy!

- 1 sweet potato cubed

- 1 cup red lentils uncooked

- 3 tablespoon tomato paste

Instructions
