How do you make Nourish Pot?
1. Chop + prep all veggies.
2. In a large soup pot, add 1 tbsp olive oil, onion and mushrooms and saute.
3. Add the rest of the ingredients to the pot and bring to a boil.
4. Cover and reduce heat to low. Stir every 5 minutes for 30-40 min until lentils are tender and sweet potato is cooked!
5. Serve over rice.
