What ingredients do I need for Nourish Pot?

olive oil

yellow onion: Full of antioxidants.

baby bella mushrooms: High in B vitamins, selenium, copper, and potassium.

kale or spinach: High in fiber which can help regular metabolism.

sweet potato: Contains anti-inflammatory properties to help with inflammation.

garlic

red lentils: Has protein, fiber, iron, folate, and antioxidants.

vegetable broth: Not only adds flavor, but adds in nutrients and vitamins.

bell pepper: Great source of Vitamin C.

crushed tomatoes

tomato paste

salt and pepper

How do you make Nourish Pot?

1. Chop + prep all veggies.

2. In a large soup pot, add 1 tbsp olive oil, onion and mushrooms and saute.

3. Add the rest of the ingredients to the pot and bring to a boil. 

4. Cover and reduce heat to low. Stir every 5 minutes for 30-40 min until lentils are tender and sweet potato is cooked!

5. Serve over rice.

Should I use spinach or kale?

Either will work for this dish, so whichever you prefer or find at your store!

Can I substitute the lentils?

You can use any type of lentil or bean that you enjoy, but the cooking time may vary if you select something aside from lentils.

When is best to make this dish?

You can make Nourish Pot at the start of the week for meal prep, for dinner, for a friend who just had a baby, freezer meals, or at the end of the week to use up your veggies.

Extra Helpful Tips

  • To know if your Nourish Pot is done cooking, check to see if the sweet potato chunks are fork tender and that the lentils are soft.
  • You can use just about any veggies in this dish which makes it a great “throw together” dinner when you want to use produce in your fridge.
  • Rinse your lentils before adding to your pot to get rid of excess starch which could cause gas and bloat.

the ingredients

  • 1 tbsp olive oil
  • 1 yellow onion diced
  • 2 cups chopped baby bella mushrooms
  • 2 cups chopped kale sub 2 cups spinach
  • 1 sweet potato cubed
  • 1 tsp fresh garlic
  • 1 cup uncooked red lentils
  • 3 cups vegetable broth
  • 1 red bell pepper
  • 1 14 Oz can crushed tomatoes
  • 3 tbsp tomato paste
  • 1 tsp salt
  • Pinch of pepper

instructions

  • Chop and prepare all veggies (onion, mushrooms, kale, sweet potato, bell pepper).
  • In a large soup pot, add 1 tbsp olive oil, onion and mushrooms and saute for 5 minutes.
  • Add the rest of the ingredients (kale, sweet potato, garlic, red lentils, vegetable broth, bell pepper, crushed tomatoes, tomato paste, salt and pepper) to the pot and bring to boil.
  • Cover and reduce the heat to low. Stir every 5 minutes for 30-40 min until lentils are tender and sweet potato is cooked!
  • Serve over rice.
