Chop and prepare all veggies (onion, mushrooms, kale, sweet potato, bell pepper).
In a large soup pot, add 1 tablespoon olive oil, onion and mushrooms and saute for 5 minutes.
Add the rest of the ingredients (kale, sweet potato, garlic, red lentils, vegetable broth, bell pepper, crushed tomatoes, tomato paste, salt and pepper) to the pot and bring to boil.
Cover and reduce the heat to low. Stir every 5 minutes for 30-40 min until lentils are tender and sweet potato is cooked!
Serve over rice.

Notes
To know if your Nourish Pot is done cooking, check to see if the sweet potato chunks are fork tender and that the lentils are soft.
You can use just about any veggies in this dish which makes it a great “throw together” dinner when you want to use produce in your fridge.
Rinse your lentils before adding to your pot to get rid of excess starch which could cause gas and bloat.
