Plus, they are gluten-free! You can add in any of your favorite mix-ins including chocolate chips, walnuts, banana slices, blueberries–the options are endless. Notes on Ingredients
- Gluten-free flour: Any gluten-free flour blend works. You can also use whole-wheat flour if you’re not gluten-free.
- Maple syrup: Be sure to use 100% maple syrup, not pancake syrup which is often high fructose corn syrup and artificial coloring.
- Apple sauce: Adds moisture to the pancakes without needing any oil. I use plain and unsweetened.

How do you make Healthy Vegan Pancakes?
- Heat a non-stick pan on medium heat.
- In a mixing bowl, combine the flour, flax, baking powder, cinnamon and pinch of salt.
- In a separate bowl, combine the wet ingredients – maple syrup, applesauce, almond milk and vanilla. Stir to completely combine.
- Add the wet ingredients to your dry ingredients and stir until there are no lumps.
- Make the pancakes! Measure ¼ cup for each pancake and cook them 1-2 minutes on each side.
- Enjoy!
- Step 1: First, heat a pan on medium heat. Mix together dry ingredients. In a separate bowl, mix together wet ingredients.
- Step 2: Then, add wet ingredients to dry and stir to combine. Make the pancakes with ¼ cup of batter and cook on each side for 1-2 minutes. Top with syrup and enjoy!

Yes! Wrap each pancake in parchment paper or wax paper and freeze. To reheat, add them to a microwave or toaster until warmed through.

You can substitute the ¼ cup of almond flour for ¼ cup coconut flour or oat flour. Use rice milk or oat milk instead of almond milk.

This is a great recipe. Yum! I only made a few adjustments based upon taste and what I had on hand: reduced cinnamon to 1 tsp, used a combo of ground chia and flax seeds (b/c I had some already combined), and used unsweetened soy milk (again, what I had on hand). Delicious. My non-whole foods eating husband said, “these are great,” and ate 4! I added frozen blueberries. For us, the recipe made 6 pancakes. Thanks for this recipe!!
