They are filled with so much flavor, and the taco shell gets golden and delicious. And of course, these tacos, along with the creamy avocado lime sauce,  are completely dairy free and vegan!

What ingredients do I need for Bean and Sweet Potato Tacos (quick and easy!)

Taco filling:

black beans: helps bind the taco together while also having nutrients

sweet potato: also helps be a binder, and takes on the flavors of all of the seasoning.

salsa: I love one that is just vegetables and seasoning

taco sauce: whatever kind you prefer! Mild, medium, or spicy.

smoked paprika

garlic powder

salt and pepper

+ 6 tortillas (corn or flour)

Avocado lime crema:

unsweetened dairy free yogurt: you’d never know that there was yogurt in this sauce!

avocado: makes this crema so incredibly creamy.

olive oil

cilantro: adds so much flavor

lime juice

How do you make Bean and Sweet Potato Tacos (quick and easy!)

1. Bake or microwave the sweet potato.

2. Mash all taco filling ingredients in a bowl or pulse in a food processor.

3. Add filling to tortillas and fold in half,  then pan fry on medium high heat in olive oil.

4. Make the crema by blending all ingredients in a blender and then dip tacos in the crema. Eat fresh and enjoy!

You can use any type of salsa that you prefer! I love salsa with a little bit of a kick to add some spice.

How should I cook the sweet potato?

There are a couple of options for cooking the sweet potato. One way is by peeling the sweet potato, cubing it, and putting the cubes in a microwave safe bowl with olive oil for about 5 minutes. Another option is by baking the potato at 425F for 30 minutes. Then, cut the potato in half and scoop out the inside.

Which tortillas do you suggest?

Depending if you like corn or flour tortillas (or really any other kind!) will help you determine which to purchase.

  • Make sure to rinse the black beans from the can to prevent bloating.
  • Cook the sweet potato ahead of time if you want to save time.
  • If you are in a crunch for time, or want them all made at once, line a baking sheet with parchment paper, and place the filled tortillas on the baking sheet. Coat with olive oil and bake or air fry until golden brown.
