Mix yogurt, herbs (oregano, parsley, thyme, basil), garlic and olive oil together with a pinch of salt and pepper.
Add an extra drizzle of oil to the bread and rub a garlic clove on the open faced bread halves.
Spread the yogurt mixture on the bread, top with vegan parmesan, and then put in the oven.
Bake on broil for 5-8 minutes until bubbly and crispy.
Notes
If your bread is on the staler side, don’t fret, gently run the bread under a light stream of water. When it bakes, it’ll be good as new!
To save time, mince your garlic ahead of time and store in an airtight container in the freezer.
When using herbs, buy plants instead of packages that are one time use. This way you will be able to harvest your own herbs and it is cost effective, as well!
