Add all ingredients to a food processor, except chocolate chips, and blend until smooth.
Fold in chocolate chips.
Roll into 1-inch balls (dampen hands to prevent sticking) and add each ball onto a plate. If you want, add more chocolate chips to the outside of the balls.
Garnish with sea salt.
Allow bites to firm up in fridge for 30 minutes.

Notes
Use a food processor, not a blender, to blend up the cookie dough.
Feel free to substitute any type of nut or seed butter in place of the peanut butter like almond butter, sunflower butter, or cashew butter.
These are safe to eat raw as they contain no eggs. Store leftovers in the fridge for up to 1 week.
