What ingredients do I need for Golden Girl Curry?

yellow onion: added nutrients and antioxidants

garlic: for flavor

cherry tomatoes: great for inflammation and blood flow

cauliflower: high in vitamin c and vitamin k

olive oil: a healthier source of fat

butter beans or chickpeas: filled with vitamins, fiber, and protein

veggie broth: adds liquid and flavor

coconut cream: makes the curry nice and creamy

kale or spinach: adds antioxidants and texture

garnish: cilantro + coconut cream
rice or bread for serving

How do you Make Golden Girl Curry?

  1. Chop and prep onion, garlic, and cauliflower. 
  2. Rinse and drain beans.
  3. Saute onion and garlic in olive oil.
  4. Add spices and saute another minute.
  5. Add in cauliflower and tomatoes.
  6. Add veggie broth and butter beans. Stir. 
  7. Cover and simmer for 20 minutes.
  8. Add in coconut cream.
  9. Blend using an immersion blender.
  10. Add in kale then cover and cook for another 5 minutes.
  11. Garnish with cilantro. Serve over rice or with pita/naan.

What if I do not have butter beans?
You can use any type of white bean for this dish. Chickpeas can be used instead of the butter beans. The beans help the curry get thick and creamy.

What should I serve Golden Girl Curry with?
You can put this curry over rice, dip some pita or naan in it, or eat it as is with a spoon!

What if I do not have an immersion blender?
No problem – You can use a blender, just make sure the vegetables and liquid are cooled enough so it does not explode in the blender.

the ingredients

  • 1 yellow onion finely diced
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes
  • 1 head cauliflower chopped in small pieces
  • 2 tbsp olive oil
  • 3 cans butter beans or chickpeas rinsed and drained
  • 1 cup vegetable broth
  • 1/2 cup coconut cream unsweetened
  • 2 cups kale or spinach shredded

Garnish

  • cilantro
  • coconut cream

Spice Blend

  • 1 tsp curry powder
  • 1/2 tsp coriander
  • 1/2 tsp paprika
  • 1/2 tsp turmeric powder
  • 1/2 tsp cumin
  • 1/4 tsp chili powder
  • 1/2 tsp ground ginger
  • 1 tsp salt
  • pinch pepper

instructions

  • Chop and prep the onion, garlic, and cauliflower.
  • Rinse the beans and drain.
  • In a large pot or pan, saute the onion and garlic in olive oil on medium heat until translucent. Add spices and saute for another minute.
  • Add in cauliflower and tomatoes. Saute for another 5 minutes.
  • Add veggie broth to deglaze the pan.
  • Add in butter beans. Stir. Cover and simmer for 20 minutes.
  • Add in coconut cream. Blend using an immersion blender. Add in the kale then cover and cook for another 5 minutes.
  • Garnish with cilantro and coconut cream. Serve over rice or with pita/naan.
