Notes on Ingredients
- Coconut: Be sure to toast the shredded coconut for optimal flavor and texture.
- Medjool dates: I like to use the medjool date variety but variety is fine. Be sure to pit the dates.
- Chocolate chips: Use low-sugar, dairy-free dark chocolate chips.

How do you make Vegan Copycat Girl Scout Cookies?
- Prep a baking sheet with parchment paper.
- Toast coconut shreds in a pan on medium heat for 5 minutes until golden brown.
- Add the coconut into a food processor along with oats. Blend for 30 seconds.
- Add the dates, vanilla and salt. Blend until completely combined.
- Make cookies with 2 tablespoons of the cookie dough. Place them on the baking sheet. Use a straw to poke holes in the center and then freeze for 10 minutes.
- Melt dark chocolate chips. Dip the bottom of each cookie in melted chocolate and place back on the baking sheet. Drizzle chocolate on top.
- Freeze for 15 minutes then enjoy! Store in the fridge.
- Step 1: First, line a baking sheet with parchment paper and toast the coconut shreds. Add coconut and oats to a food processor and blend.
- Step 2: Then, add dates, vanilla, and salt and blend until a dough forms. Make cookies with 2 tablespoon of dough each. Use a straw to poke a hole in the center of each cookie.
- Step 3: Freeze cookies for 10 minutes while you melt the dark chocolate.
- Step 4: Next, dip each cookie in dark chocolate, place it on the parchment paper, and drizzle with extra chocolate. Freeze for another 15 minutes, then enjoy!

The cookies will last in the fridge in an airtight container for up to a week. Make a double batch so they will last you all week long!
You can try, but a food processor will work best to combine the dates and coconut into a smooth, even dough.
This recipe makes 12 small Samoa cookies. I would say 2 cookies is a serving!
While you can do the double-boiler method on the stove, I like to just heat the chocolate in a microwave-safe dish in the microwave in 20 second increments. Be sure to stir in between to avoid burning the chocolate.

- 1 cup coconut shredded and toasted
- 1 cup medjool dates about 12, pitted
- ½ cup rolled oats
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- ¾ cup chocolate chips dark
Instructions
- Prep a baking sheet with parchment paper.
- Toast coconut shreds in a pan on medium heat until golden brown and toasted. Stir constantly otherwise it will burn. This will take about 5 minutes.
- Add the coconut into a food processor. Add oats. Blend for 30 seconds.
- Add the dates, vanilla and salt. Blend until it’s completely combined. It will be a crumbly texture but will stick together when rolled into cookies.
- Make cookies with 2 tablespoons of the cookie dough. Form balls then shape into a flat round cookie. Place them on the baking sheet. Use a straw to make holes in the center. Freeze for 10 minutes.
- Melt dark chocolate chips by microwaving them in 45 second increments until melted, stirring as you go. Dip the bottom of each cookie in melted chocolate and place back on the baking sheet. Drizzle chocolate on top as well using a spoon.
- Freeze for 15 minutes then enjoy! Store in the fridge.

These actually do taste just like Samoas. I didn’t think they’d be able to replicate the caramel pull you get from the girl scout cookie, but the texture here after being a little frozen is amazing, and really replicates the bite. I only used 9 dates instead of the cup = 12 dates rule because I didn’t want to use up almost my whole box (I think my box came with 18, so I figured if I only use 9 I could make this recipe twice). And it still turned out perfect. I also bought unsweetened shredded coconut, and toasted it at home, mixing in some untoasted to fill up the cup.

These were fantastic. Super yummy and not too sweet.
Using a 2 Tablespoon measuring spoon was able to get exactly 6 cookies, so half of what the recipe says and followed it exactly.

These tasted pretty good, exactly what you would expect reading the ingredients. This isn’t a perfect replacement, they are missing the caramelyness. But, they were pretty quick and easy! I just used raisins instead of dates (who wants to pay 10x extra for the same flavor) and I added 1tb each of melted coconut oil and maple syrup, because it was way too dry for my food processor.
