Notes on Ingredients

- Oats: You must use quick oats for this recipe to work! If you only have rolled oats, make my Protein Brownie Overnight Oats or Berry Muffin Baked Oats instead.
- Coconut Milk: I like to use fresh refrigerated coconut milk here, not canned, but any non-dairy milk will work. Opt for unsweetened if possible.
- Vanilla Protein Powder: I use a half scoop of Wellious vegan vanilla protein powder but you can use whatever your favorite is. I find half of a scoop is a good amount to thicken the oats without changing the flavor or texture too much.
- Maple Syrup: Can omit if you don’t want much sweetness or prefer to add sweetener on top. Any sweetener will work as a substitute (like honey, agave, or coconut sugar).

For this combo, I love doing a mix of tropical fruits including banana, kiwi, dragonfruit, and mango along with hemp seeds, healthy granola, cacao nibs, shredded coconut, and raw almond butter for the perfect combo. The toppings add a ton of healthy fats and fiber to the oats to keep your blood sugar stable.
