Homemade BBQ Sauce
1cupketchupno sugar added
6tablespoonapple cider vinegar
2tablespoonlemon juice
2tablespooncoconut sugar
2tablespoonmaple syrup
2tablespoonyellow mustard
2teaspoonsmoked paprika
½teaspoononion powder
½teaspoongarlic powder
1teaspoonchili powder
¼teaspoonpepper
⅔cupwater
Instructions
BBQ Sauce
Add all ingredients for BBQ sauce into a small to medium pot and bring to a boil, reduce heat to low-medium and let cook until thick, stirring occasionally. Should take 20-30 minutes.
Pulled Jackfruit
Strain, rinse and shred canned jackfruit.
Add jackfruit to a pan and sauté on medium heat until the moisture is cooked out, stirring occasionally. Should take about 10 minutes.
Turn off the heat (or turn to simmer if the BBQ sauce is cold). Stir in about 1 cup of the BBQ sauce or as much or as little as you want.
Sandwich Assembly
Lightly toast the buns.
Add shredded jackfruit to the bottom of each bun. Top with shredded cabbage slaw.
Add extra BBQ sauce on top and close with the top bun. Enjoy!
Notes
Save time using store-bought BBQ sauce instead of homemade.
Save leftover homemade BBQ sauce in an air-tight mason jar in the fridge for up to 1 week.
