Vegan Arugula Pesto (oil-free)
Savory, flavorful, simple 5-minute pesto that is made without dairy or oil. 100% WFPB, gluten-free optional and soy-free.

Ingredients

pasta
I used gluten-free brown rice pasta

cup
arugula
I use Josie's Organics
1
cup
basil
tightly packed cup
1
lemon juiced
½
cup
raw cashews
2
tablespoon
nutritional yeast
2
cloves of garlic
or 1 teaspoon garlic powder
1
teaspoon
salt
vegan parmesan cheese
for topping
Instructions
Boil your pasta of choice.
Blend all pesto ingredients in a food processor until combined completely, scraping down the sides as necessary.
Strain pasta then stir in pesto sauce. Garnish with vegan parmesan cheese.
Serve and enjoy!
