Make date caramel by adding pitted dates and water into blender or food processor. Blend until completely smooth, adding more water by the tablespoon if it's too thick. You want it to be pourable but not watery. Drizzle date caramel on top.
Melt chocolate chips in a bowl in the microwave for 30-second increments, stirring as you go, until completely melted. Drizzle chocolate over top.
Sprinkle on cinnamon, sea salt, and a few extra dark chocolate chips!
