Spray the tofu with olive oil and add to the air fryer.
Chop up all of your vegetables.
Whisk together the dressing ingredients in a small bowl.
Add the vegetables, tofu, and dressing to a large bowl.
Mix all of the ingredients together.
Enjoy!
Notes
Make sure the dressing is runny enough to spread throughout the salad. One trick is to use a fresh jar of peanut butter so it's runny or to add 1 tablespoon of hot water.
Use a soy free substitute for tofu if you are soy free.
If you are short on time use pre chopped cabbage and carrots.
