One Pan Broccoli Cheddar Orzo
Easy and convenient meals that only require one pan have been on repeat lately. This dish is creamy and delicious, and no one would have any clue it is dairy free and vegan.

cup
olive oil

coconut milk
unsweetened full fat

teaspoon
turmeric
¼
cup
nutritional yeast
1
teaspoon
garlic powder
1
teaspoon
dried basil

teaspoon
dried oregano
1
teaspoon
dried thyme
pepper to taste
juice of 1 lemon

water

broccoli
chopped
1 ½
cups
orzo
Instructions
Add all of the ingredients to the pan except the broccoli and orzo.
Mix together and add the broccoli and orzo.
Mix again until well combined making sure the orzo is fully covered by the liquid.
Bake in the oven at 400F for 30-40 minutes until orzo is cooked.
Give it a good mix, and top with vegan parmesan.
Notes
Make sure the orzo is completely covered by liquid.
Chop the broccoli into small bite sized pieces so it cooks evenly.
Use unsweetened full fat coconut milk without added sugar.
Top with vegan parmesan once out of the oven.
