Healthy Snack Idea. Protein Energy Bites. YUM.
I have come up with a new yummy recipe that I am so excited to share. These little protein bites are the perfect grab-and-go snack or the perfect after-dinner treat. These bites provide healthy fats, omegas, plant-based protein and are DELISH! These little bites are vegan, gluten-free, soy-free, and don’t contain any refined sugar. I coated half of them in cacao powder and the other half in coconut.
✔️Vegan
✔️Gluten-free
✔️Oil-free
✔️Soy-free
Ingredients
1 cup medjool dates
½ cup raw cashews
½ cup raw almonds
½ cup dried unsweetened apricots (can sub raisins)
¼ cup raw pumpkin seeds
¼ cup creamy natural peanut butter
Drop of vanilla extract
Save this for later?
Pinch of salt – optional
¾ cup shredded unsweetened coconut (dried) (optional for coating the outside)
2 tablespoon cacao powder (optional for coating the outside)
How-To
1. Add all ingredients into the food processor except for the coconut
2. Process ingredients until well combined
3. Start forming the balls (you can make them as big or as small as you’d like), then roll them in the shredded coconut or dust with cacao powder
4. Enjoy! Happy snacking!
