The key is to use baked sweet potato slices instead of bread. This is a delicious gluten-free alternative to bread and packs in a ton of vitamin A. Notes on Ingredients
- Sweet potato: This is the base of this naturally gluten-free avocado toast. Use a whole sweet potato and cut it into ½ inch thick slices.
- Avocado: Make sure your avocado is ripe or use pre-mashed avocado to save time.
- Cucumber: Adds crunch to the toast but feel free to add whatever veggie you like. I also love adding sliced tomatoes and sprouts to my toast!

How do you make Sweet Potato Avocado Toast?
- Preheat the oven to 400° F. Peel and slice sweet potato into long pieces about ½ inch thick to make your “toast.”
- Roast sweet potato slices for 20 minutes until just soft but not mushy.
- Top with mashed avocado, cucumber slices, and sesame seeds for extra healthy fats. Season to taste with salt and pepper. Drizzle olive oil on top.

You can let the sweet potato toast slices cool before you top them or leave them warm! It’s totally up to you. I usually let mine cool for 10-15 minutes before topping so they’re warm but not hot.
Yes! Freeze the slices in individual baggies and when you’re ready to eat, reheat them in the oven, toaster, or microwave.
The options are endless. Other topping ideas are nut butter and banana or berries, hummus, vegan cream cheese, tomato slices and herbs, hemp seeds, and jam.

This looks delicious and I’m ready to try!! So…I want to do some meal prep and bake the sweet potato slices and keep them in the fridge to toast in the toaster at work. Hi Ilene! Jordan from the HealthyGirl team here. The sweet potato toast slices should not fall apart in the toaster. I would recommend slicing them a bit thicker (at least 1/2 an inch) so they are sturdy enough! Otherwise, if you’re packing these for work, it may be easier to reheat them in a microwave, add toppings, and then eat with a fork (or pick up as toast). Hope this helps!

SUCH a great hack for when you want toast but don’t want to use traditional bread! I am grain-free and it’s really difficult/expensive to find a grain-free bread that I enjoy so this has been the perfect solution.
