These Vegan Air-Fried Pickles are crunchy, crispy, perfectly salty, but they’re also plant-based, gluten-free and made in the air-fryer! These are so much more delicious and nutritious than the typical restaurant, deep-fried version. Other appetizers I think you’ll love to try are Air-Fryer Wontons, Corn Salad with Guacamole, Dairy-Free Garlic Bread, and Buffalo Tofu Poppers.
Why I Love This Recipe
- Gluten-Free: You can easily make these Vegan Air-Fried Pickles gluten-free by using gluten-free breadcrumbs.
- No Oil Needed: Usually a deep-fried and oil-laden dish, this version of air-fried pickles doesn’t require any oil besides an optional light spray.
- Crowd Pleaser: Fried pickles are a fan-favorite, crowd-pleasing appetizer. Make them for a party or sports game and everyone will devour them! I like to serve them with cashew sour cream or homemade ranch.
- Paired with Homemade Ranch: I pair these air-fried pickles with a homemade hemp seed ranch dressing (recipe included). It’s a next level pairing!

Notes on Ingredients
- Pickles: I used whole, Manhattan-style kosher dill pickles and sliced them into ½ inch slices.
- Aquafaba: The liquid from a can of chickpeas. This will act as a binder, similar to an egg wash.
- Breadcrumbs: I like the Kooshy sourdough breadcrumbs best but use whatever brand you prefer. Use gluten-free if needed.

You’ll add all of the ingredients to a high-speed blender and blend until smooth and creamy. Unfortunately, a food processor will not work for this dressing recipe.
Yes! To make them in the oven, add them to a parchment-lined baking sheet and bake for 25 minutes, or until golden and crispy, in the oven at 475 degrees F.

Extra Helpful Tips
- Once they’re done in the air-fryer, gently add them to a plate and serve! Handle them gently otherwise the breading will fall off!

- Feel free to spray a little olive oil on them if you want them extra crispy.
