Notes on Ingredients

- Coconut Cream: You can use coconut milk, a non dairy half and half, or another non dairy milk here. Use leftover coconut cream and make my Sheet Pan Roasted Tomato Soup next!
- Sweet Potato: Adds creaminess and thickness to the soup. Don’t worry about cutting perfect sweet potato cubes because it will get cooked down and blended!
- Tomatoes: You can use any tomato in place of cherry tomatoes… roma, beefsteak, campari, etc.
- Olive Oil: Extra virgin olive oil will highlight the deep flavors in this soup! Avocado oil would work in place.
- Seasoning: This recipe uses basil, thyme, oregano, garlic powder, salt, and pepper for spices. Feel free to swap out any of those spices or add in other spices you love.

Sure, you can substitute any other creamy liquid in place of the coconut cream. This version of coconut is creamiest, but regular canned coconut milk (full-fat or light) would work, along with another non-dairy milk.

Maryam K says
what are substitutes for coconut cream?
Jordan Stacy says
Hi Maryam! Jordan from the HealthyGirl team here. If you aren’t vegan/dairy-free, you can use regular milk or cream. If you avoid dairy, a heavy cream substitute or a high-fat milk like coconut milk, oat milk, or almond milk would work. Any milk is fine, just keep in mind it may be less creamy!

Followed this recipe as written—the only change I made was substituting homemade cashew cream for the coconut cream. I will definitely make this again when it gets cold out (but I also enjoy soup year-round, so it still felt right on an 85* day!). Thank you SO much for the recipe and clear instructions.

Not a fan of canned coconut cream. If I use full-fat canned coconut milk, will the recipe still turn out pretty much the same? Thank you!
Jordan Stacy says
Hi Melanie! Jordan from the HealthyGirl team here. Full fat canned coconut milk is the same-that works!
