Sweet Potato Avocado Toast

A healthy, easy, gluten-free alternative to avocado toast using sweet potato instead of bread.

Ingredients

  • 2 slices of sweet potato
  • 1 mashed avocado
  • 1/4 cup cucumber slices
  • 1 tbsp sesame seeds
  • salt and pepper to taste
  • 1 tsp olive oil

Instructions

  • Preheat oven to 400° F. Peel and slice sweet potato into long pieces about ½ inch thick to make your “toast.” 
  • Roast sweet potato slices for 20 minutes
  • Top with mashed avocado, cucumber slices, and sesame seeds for extra healthy fats. Season to taste with salt and pepper. Drizzle olive oil on top. 
  • Enjoy!

Notes

Meal prep hack: roast a bunch of slices of sweet potato for the week and keep in a container in the fridge. Pop in the toaster when you're ready to eat breakfast.
