If you want a no-bread stuffing recipe for Thanksgiving, you have to make this plant-based gluten-free stuffing made with quinoa! It has stuffing flavors but it's bread-less.

Ingredients
1.5 cups celery choppedI use Josie's Organics
1cups butternut squash chopped
1/2large red onion chopped
4cupscooked quinoa
3/4cupfresh flat leaf parsley chopped
1tspsagedried
1 tspsalt
1tspgarlic powder
1.5tsprosemarydried
1tspthymedried
1/2tsppepper
1/2cupveggie broth
Instructions
Cook quinoa and set aside. Chop and prep veggies. Make sure the butternut squash is chopped small so it cooks well.
In a large non-stick pan, saute onion, butternut squash, and celery in 1/4 of the veggie broth for about 20 minutes until golden brown, the squash is fork-tender and caramelized.
Once the veggies are done, combine the quinoa and veggies in the pan. Add the spices and the other 1/4 cup of the veggies broth and saute for another 5 minutes. Stir in fresh chopped parsley.
