Peanut Butter Chocolate Chip Cookies (Vegan, Gluten-Free, Oil-Free)
These plant-based vegan peanut butter chocolate chip cookies are delicious and healthy! They have no refined sugar and are totally oil-free. Even the kids will love them!

Ingredients

natural peanut butter
1/3
cup
coconut sugar
2
tbsp
applesauce
1/2
tsp
vanilla extract
1/4
cup
gluten-free flour
I used the Trader Joe's blend
1/4
tsp
baking soda
1/3
cup
chocolate chips
I used mini ones
Instructions
Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
Add the natural peanut butter, coconut sugar, applesauce and vanilla extract to a mixing bowl. Mix until completely combined.
Add flour and baking soda to the wet ingredients and mix. Don't over mix! Fold in the chocolate chips.
Measure out a heaping tbsp of the dough for each cookie, roll into a ball then flatten them into a cookie shape. I got about 11 cookies.
Bake for 8-9 minutes. As they cool, they will set. Wait 20 minutes for them to completely cool. Careful not to over-bake! They will dry out.
