This vegan Caesar Pasta Salad takes the everyday caesar and takes it up a notch! With protein from the tofu, and some healthy carbs from the pasta, this Caesar Pasta Salad has a little bit of everything to keep you full.

Ingredients
1headdinosaur kale
1cuphalved cherry tomatoes
2cupscooked whole wheat pasta
1/2cupshaved vegan parmesan
1blockhigh protein tofu
Dressing
1cupraw cashews
1tbspolive oil
2tbsplemon juice
1tbspcapers
1tbspcaper brine
2tspdijon mustard
1/2tspsalt
3/4cupwater
1tspgarlic powder
pinch of pepper
Instructions
Cook and strain the pasta.
Break apart the tofu and sauté or grill.
Chop the kale and tomatoes.
Add all ingredients to a bowl.
Make the dressing.
Toss and enjoy!
