Mango Mama Salad (with creamy cilantro dressing!)
This easy, fresh, vegan healthy salad takes 10 minutes to make. Store in the fridge up to 4 days.

- 2 cups chopped kale
- 2 cups cubed mango
- 1 cup diced avocado
- 2 cups diced cucumber
- 1/2 cup diced red onion
- 1 cup diced bell pepper
- 1 cup corn
Creamy Cilantro Dressing
- 1/2 cup raw cashews
- 1/3 cup avocado oil
- 1 head cilantro
- 1/4 cup lime juice
- 3 tbsp water
- 1 tsp salt
- 1 tsp garlic
Chop + dice all veggies and mango.
Use frozen or fresh corn and steam in microwave for 3 minutes.
Add all veggies into a large salad bowl.
