Mango Mama Salad (with creamy cilantro dressing!)

This easy, fresh, vegan healthy salad takes 10 minutes to make. Store in the fridge up to 4 days.

Ingredients

  • 2 cups chopped kale
  • 2 cups cubed mango
  • 1 cup diced avocado
  • 2 cups diced cucumber
  • 1/2 cup diced red onion
  • 1 cup diced bell pepper
  • 1 cup corn

Creamy Cilantro Dressing

  • 1/2 cup raw cashews
  • 1/3 cup avocado oil
  • 1 head cilantro
  • 1/4 cup lime juice
  • 3 tbsp water
  • 1 tsp salt
  • 1 tsp garlic

Instructions

  • Chop + dice all veggies and mango.
  • Use frozen or fresh corn and steam in microwave for 3 minutes.
  • Add all veggies into a large salad bowl.

Dressing

  • Blend all dressing ingredients in high-speed blender until smooth.
  • Pour over salad, toss and enjoy!
