Ingredients
1cupdiced yellow onion
1cup diced bell pepper
1cupchopped green cabbageI use Josie's Organics
1headsliced green onion I use Josie's Organics
1cupshredded carrots
2cupscauliflower rice
2cupspre-cooked jasmine rice
1cupfrozen green peas
3tspminced garlic
2tspminced ginger
12ozcrumbled tofuextra firm
1tbspsesame oil or veggie broth optional
1tspturmeric powder
1/4cupsoy saucesub coconut aminos or gf tamari
sriracha or red chili flakes optional for spice
Instructions
Saute all of the veggies, garlic and ginger in a large non-stick pan or wok in sesame oil or veggie broth on medium heat, until cooked to your desired tenderness. Stir continuously.
Add in crumbled tofu and cook for another 5 minutes. Add in the cooked rice, turmeric, and soy sauce. Stir until completely combined.
Serve and enjoy!

Garnish with sesame seeds, sriracha, seaweed shreds, or more green onions!
