Vegan Quinoa Butternut Squash Stuffing

If you want a no-bread stuffing recipe for Thanksgiving, you have to make this plant-based gluten-free stuffing made with quinoa! It has stuffing flavors but it's bread-less.

Ingredients

  • 1.5 cups celery chopped I use Josie's Organics
  • 1 cups butternut squash chopped
  • 1/2 large red onion chopped
  • 4 cups cooked quinoa
  • 3/4 cup fresh flat leaf parsley chopped
  • 1 tsp sage dried
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1.5 tsp rosemary dried
  • 1 tsp thyme dried
  • 1/2 tsp pepper
  • 1/2 cup veggie broth

Instructions

  • Cook quinoa and set aside. Chop and prep veggies. Make sure the butternut squash is chopped small so it cooks well.
  • In a large non-stick pan, saute onion, butternut squash, and celery in 1/4 of the veggie broth for about 20 minutes until golden brown, the squash is fork-tender and caramelized.
  • Once the veggies are done, combine the quinoa and veggies in the pan. Add the spices and the other 1/4 cup of the veggies broth and saute for another 5 minutes. Stir in fresh chopped parsley.
  • Serve and enjoy!

Notes

Oil-free veggie method: Saute veggies in 1/4 cup veggie broth
Oil method: Saute veggies in 2 tbsp extra virgin olive oil
