Vegan Chickpea Cookie Dough Bites (gf, oil-free)

No-bake, rich, sweet chickpea cookie dough bites are the easiest, most delicious dessert! 100% plant-based, gluten-free, oil-free and soy-free.

Ingredients

  • 1 15 oz can of chickpeas rinsed and drained
  • 5 medjool dates
  • 1/2 cup creamy peanut butter
  • 1/4 cup rolled oats
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup cut maple syrup in half if you don't want them as sweet
  • 1/2 cup vegan chocolate chips
  • 1 tsp vanilla
  • sea salt garnish

Instructions

  • Blend all ingredients in food processor except chocolate chips until smooth.
  • Fold in chocolate chips until combined.
  • Roll into 1-inch balls (dampen hands to prevent sticking) and add onto a plate. If you want, add more chocolate chips to the outside of the balls like I did.
  • Garnish with sea salt.
  • Allow bites to firm up in fridge for 30 minutes.
  • Serve and enjoy!

Notes

Store in fridge in a container or on a covered plate for up to 4 days. You can also freeze them!
