Jackfruit is one of my favorite foods to cook with because it is so versatile. You NEED to try this jackfruit vegan curry. It will make all of your curry dreams come true.

Curry dishes are so yummy and filled with nutrients, fiber, plant-protein and delicious flavors. I thought that adding jackfruit to a curry would bring it to the next level!

You can make jackfruit into a shredded meat-like texture which also acts like chicken in this recipe. If you don’t have access to canned jackfruit then you can just omit it and make the recipe without it.

This recipe turned out SO yummy! I paired it with brown rice but it’s delish just as is.

Fresh Ingredients

You can add whatever veggies you like into this curry but I LOVE adding peas, onion and cauliflower. The cauliflower helps to make this jackfruit vegan curry extra delicious.

The Jackfruit

Listen to me – you need to use canned young green jackfruit for this recipe. Do not use ripe fresh jackfruit.

Rinse the canned jackfruit and shred it with your hands to get that shredded chicken consistency.

The main liquid in this recipe is veggie broth!

You are going to also be using a little coconut milk for flavor and richness. I get the reduced fat one from Trader Joe’s.

If you do not want to use coconut milk you can use unsweetened almond milk or any other non-dairy milk you like!

Meal Prep

This makes A LOT of curry so make this recipe of jackfruit vegan curry at the beginning of the week and you will have it for multiple meals. This is also a great meal to make if you have a big group of people to feed or a large family.

Pair the Vegan Jackfruit Curry with Brown Rice!

Brown rice is a great addition to any meal, it is a very healthy complex carbohydrate that makes this meal well rounded and more filling.

How to make brown rice – 1 cup brown rice, 2 cups water

I paired my curry with brown rice and it seriously turned out SO BOMB! It was very filling but wasn’t overly filling and kept me satisfied for hours.

Top this baby with a lil cilantro and you’re good to go!

Jackfruit Vegan Curry (gluten-free, oil-free)

This jackfruit vegan curry is filling, flavorful, healthy and delicious! Made without oils, it's dairy-free, WFPB friendly, gluten-free, soy-free and has no added sugar.

the ingredients

  • 1 small head of cauliflower chopped
  • 2 cups frozen peas
  • 5 cups veggie broth
  • 1 yellow onion diced
  • 1 sweet potato cubed
  • 2 red or golden skin potatoes cubed
  • 1/4 cup coconut milk
  • 1 can green jackfruit I got mine at Trader Joe's
  • cilantro for garnish
  • 2 tsp curry powder
  • 1 tsp cumin
  • 1 tsp garlic fresh or powder
  • 1 tsp salt
  • pepper to taste
  • 1 tbsp tapioca starch optional (as thickener)

instructions

  • Get a large soup pot and saute the onion in your pan with a little water until soft.
  • Add in the cut up cauliflower, cubed potatoes, the veggie broth, spices, jackfruit and coconut milk. Cover your pot and cook on medium/low for 20 minutes.
  • Add the frozen peas in and then cover and cook for 5 more minutes. If it's still too liquidy, you can add 1 tbsp tapioca starch to thicken it up. 
  • Pair with rice or eat it plain and garnish with cilantro!
