Detox Salad with Sunflower Seed Caesar Dressing (V/GF)

SALAD WITH VEGAN CAESAR DRESSING?! HERE I COME!

This salad made up of all raw veggies is so delicious when paired with a creamy caesar dressing. I love having this salad for lunch because it is light but also satisfying at the same time. The healthy fats and protein from the sunflower seeds in the dressing help to keep you full longer. I added butter lettuce, tomatoes, cucumbers, parsley and peppers to my salad but you can use any veggies you like. Feel free to even add chickpeas or quinoa – YUM!

This is a nutritious, yummy, raw vegan salad filled with vitamins and minerals. Raw veggies are incredible for your health because their nutrients haven’t been lost in any kind of cooking process. They are also great for digestive health, cleansing the colon and preventing constipation. I added a ton of parsley to this salad, one of the most detoxifying herbs you can have. Parsley is especially great for detoxing the liver.

Detox Salad with Sunflower Seed Caesar Dressing (V/GF)

This is a raw vegan salad that is gluten-free, vegan, plant-based, oil-free, nut-free and 100% yummy! This salad is great for weight loss, reducing inflammation, clearing skin, and for optimal wellness. 
total time 20 minutes

the ingredients

Salad

  • 2 Cups Butter lettuce
  • 1 Cup Chopped parsley
  • 1 Cup Orange bell pepper
  • 1 Cup Diced tomato
  • 1 Cup Chopped cucumber

Dressing

  • 1 Cup Sunflower seeds
  • 1 Lemon (juiced)
  • 1 tsp Garlic powder
  • 2 tsp Capers
  • 2 tsp Whole grain dijon mustard
  • 1/2 tsp pink salt
  • 1/2 Cup water (or more depending on how thick/thin you want it)

instructions

  • Chop up all of the salad ingredients and add into a bowl. 
  • Soak sunflower seeds for 10 hours or boil for 5 minutes until soft. 
  • Blend all dressing ingredients in high-speed blender until completely smooth. 
  • Use as much or as little dressing as you you'd like and pour over your salad. 
  • Enjoy!
