2-Ingredient Healthy Ice Cream (Vegan/GF)

HEALTHY ICE CREAM?! YES PLEASE!

If you have a sweet tooth but you’re trying to stay healthy, I have the solution for you. I like to call this “nice cream” because this dessert is plant-based, gluten-free, soy-free and have no added sugar. I made two flavors, mango, and cherry – both were absolutely delish! This is so healthy you could even eat it for breakfast. Can we also talk about how simple this recipe is?! It only has two ingredients and takes about 5 minutes to make. You don’t need an ice cream maker you can just use a food processor or high-speed blender.

✔️Gluten-free

✔️No added sugar

✔️100% yummy

Mango Ice Cream Ingredients (2 servings): 

  • 3 cups frozen mango
  • Splash of coconut milk or almond milk

Cherry Ice Cream Ingredients (2 servings): 

  • 3 cups frozen cherries
  • Splash of coconut milk or almond milk

How to: 

  1. Add frozen fruit and non-dairy milk of choice to a food processor
  2. Pulse then blend until completely smooth – you might have to scrape sides down every so often
  3. Eat and enjoy! Feel free to top with coconut, nuts, vegan chocolate chips, or fruit!
