Is it just me or does dinner time arrive and you have absolutely no idea what to make?! I totally relate. I wanted to compile 10 of my favorite go-t0 easy healthy vegan dinners to share with all of you!
All of the recipes featured in this blog are vegan, gluten-free, oil-free and are simple to prepare. Some of the recipes in this blog are HealthyGirl originals and some are other favorites of mine from other bloggers.

If you want a lighter dinner I highly suggest trying this vegan power bowl. If I workout in the evening and don’t want anything too heavy, this is what I am making. In addition, if weight loss is one of your goals on a plant-based lifestyle, you need to add this to your weekly menu.
Another great option for a lighter dinner is a greek salad. I know when the weather is warmer, I prefer a big salad instead of a heavy meal. This is also great as a side dish in addition to dinner.
